Did you have a spot in college where you could meander over to a historical area and get a nice little snack for a few bucks? You know, something akin to bread scraps with a delicious sauce for dipping. I think many of you did.
If I were developing such a sauce, this is how I’d do it. Ingredients pictured above just give a perfect blend that’s a great addition to sandwiches and burgers, and is also great for dipping bread, fries, and just about anything else.
*Any resemblance to an actual establishment’s recipe is purely coincidental.*
4 parts Duke’s Mayo (accept no substitutes – the twang is essential here)
1 part Woerber’s Sandwich Pal Sweet & Spicy Mustard ( the Hot & Spicy is good too, if you can find it)
1 part Horseradish Sauce ( I use Woerber’s, but any will do)
½ part A1
Mix together and adjust to get your preferred taste and color. Enjoy!

Bread ends and house - a high carb delicacy!
The sauce is remarkably versatile. I have a door shelf of my fridge devoted to the stuff.
Chimichurri and currywurst ketchup are underrated condiments.
Over his year of pandemic school from home, my youngest became a food snob. He makes a mayo/ketchup/sriracha/pickle sauce, but won't use any store bought pickles for it, and only eats it on the day it's made.
That would all be fine if he contributed to either the pickling or the clean up, but he already thinks it's beneath him. I think I'm going to get him hooked up with a job in my brother's catering kitchen as a dishwasher, so he can learn those life skills without us having to nag him.
Did your brother buy Jimmy's business or are the competitors?
Jimmy died in 2001. My bro ran that business for about 18 months, until Jimmy's widow decided to shut it down.
He bought some of the equipment and the building, and started Blue Ridge Catering in 2003. He is way more upscale than Jimmy's. Fancy stuff.

He's done very well with it, though the pandemic has not been kind to the industry.

There’s a place in the south (started in Auburn) named Guthrie’s that has been a staple condiment in my home for years. First when the expanded to Gainesville. Then when I brought sauce home from a trip to Gainesville and my wife also fell in love with it and figured out the recipe via some internet sleuthing.
As most of you know, I love the NBA Draft. I’ve loved it since I was a kid. This is a stupid deep draft so I’m excited. My excitement is tempered by the Magic ending up with picks 5 & 8. I’m fully prepared to be underwhelmed while hoping for some sort of miracle where one of the top 4 guys somehow fall to the Magic.

I texted Greg and Vitas at 8:53 this morning that my dream scenario was Suggs dropping to 5 and then the Magic taking Wagner at 8. Didn’t think it would happen. I’m pumped.
Spurs just took a guy who averaged 8 pts/game with the 12 pick. Ooookay.
Can’t believe Suggs fell to 5. Wife and I found a great outdoor brew pub near the Iowa campus. The downtown area near the campus is very cool. But to be clear, the “boutique” hotel my wife picked, where men and women over 50 drink Busch Light cans at the lobby bar, is not.
My dad ‘lived in his car’* in Iowa city for a spell when he was courting my mom while she was in grad school.
*embarassingly recently I learned that this was code for living in sin in my mom’s apartment.

Downtown Lincoln, NE has a tiny area called the Haymarket District that is pretty fun. This will be the last thing resembling a town that we see until we land in our apartment tomorrow. Nebraska is loooooong and flat.

I am at the lobby bar of my hotel, which is a high end steak joint (Single Barrel). Multiple women at the bar are drinking Busch Light tall boys. I had no idea that is a legit beer in the Midwest.

Covid ticking upwards in a big way here in Jax. I know of 2 people that have had the rona and had been vaccinated. Neighbor doc buddies tell me that 25% of the people in their hospitals, mayo and Baptist south, have had the vaccine. Also tells me that at the peak of '20 covid, they averaged 4 kids, under 18, per day in the hospital. This week, 20 a day with a high of 58. Lastly, Mayo has converted its post op rooms to covid treatment. If you have become lax with your measures, like me, reverse course.
