BaconBaking's Recipe Guestie Returns

Salsa Verde

I love cooking, but I really love cooking for family and friends. Since my sister is in college, I can't cook for her every day, but I do like to make food in bulk, freeze it and then send her off with it when she comes home. Last night she was home for the evening and I got the chance to pack her a box of foods as well as load her up on freezer foods: ham and bean soup, cabbage soup, baba ghanoush, tomato sauce, and her favorite, salsa verde.

I love making salsa but I think the best way to make it is to roast all the vegetables first. You can see I'm really not committed to any particular recipe. One batch below has hot peppers and banana peppers, while the other is heavier on the onions. Both have tomatillos and tomatoes. Really, I’m just using what I get in the CSA box this time of year. In the summer I will add in corn or peaches.

I roast all the veggies on the pan. Just washed and as is. No oil. About 30 minutes at 400 degrees.



The veggies should be dark in some spots, with the tomatoes and tomatillos ready to burst. I put everything in the food processor with a heavy handful of cilantro and juice from 1-2 limes. You should end up with something that looks like this:

    TR - I hear ya and am with ya. Admittedly, your comment put me back to that day, probably more so than I would have been otherwise. I did't live in NY but went up there on Sun w/boss/partner to watch opening wkd of NFL at a sports bar. Picked up a rental car at MSG to head out to the Hamptons for a work trip. For some reason, maybe the route took us that way, we drove right through lower Manhattan in front of the WTC. 24-hours later our cell phones started to ring. We ended up being stranded out there for a few days. Drove back to DC in the rental, saw the plumes of smoke from the towers in the a.m., and the gaping hole in the pentagon in the p.m. while returning car to national airport where it was outfitted with national guardsman in camo and donning m16's. I saw less than a dozen people, civilians rather, at the airport. Remembering all the emotions of that time.

  2. I can't believe it has been 13 years already. I worked (and still do) two blocks from the Capitol. The two hours or so where we remained in our office, not knowing what was really going on, I will never forget. But as I've told many over the years, it was the surreal drive home on 395 that sticks with me to this day (and jesus I just got chills typing this) - somehow I got on the highway at the D St tunnel, and as I'm driving towards Pentagon, it's just me and one other car on the road...we just stop our cars, he in far left lane me in right lane, staring at the smoking hole in the side of the Pentagon. I'm not sure how long in terms of real-time I sat in the car staring, but it felt like an eternity.

  3. i was in my office in fairfax, nowhere near, really, the sites of the attacks. i mostly remember two things: looking up at the crystal clear blue sky and seeing no airplanes that day or the next, and hitting refresh constantly on my browser over the next few days to see if my friends in the buildings had been reported as found safe. too many never were.

  4. I was in a sports pyschology class. A TA came in to say a plane had hit the WTC. I didn't think much of it as he didn't make it seem like a big deal. We finished class and I walked a couple blocks back to my house. Sat on the couch and turned on ESPN. That's when I realized this was a very big deal.

    Somewhat related, my stepdaughter's best friend who lives 3 doors down from us was born on 9/11. She turns 13 today. Not sure why I think its weird. Obviously children didn't stop being born on that particular day but it stills feels odd to me.

  8. high school mini-reunion this evening on the occasion of our school's 50th anniversary. i fully anticipate not remembering more than half of the people i see there. i'm basically going because two friends are in town that i haven't seen for years.

  13. Third year in law school I had a terribly boring NY Practice class in which some of us would pass around a list on a random topic for others to contribute to. One such topic was Suggested Gum Flavors. As I recall cilantro was on the list, as was gyro.

    We might have been drunk.
